You just have to DO it. I love balut - both chicken and duck (though I prefer the duck. And I like them not too developed: I've had balut where I had to spit out beak. And claws. Ok, I'm going to stop thinking about that now.) And I think it's awesome that you had the full accompaniment of sauces. I enjoy either ponzu, or fish sauce/kalamansi/thai chili peppers.
